The air fragranced by Nag Chaampa… A tiny glass of ice cold Sake and the most wonderful Coconut Curry Vegetables over crispy tofu!!!  Once a hippy, always a hippy 😀

Coconut Curried Vegetables

2 heads Broccoli – broken up in bite sized pieces
1 lb Cremini mushrooms – sliced
1 red bell pepper – cut up
1 onion chopped
2 cloves garlic – minced
2 T shredded ginger
1 lb sugar snap peas
1 can coconut milk
1 cup chicken bone broth
2 T coconut Oil
1/2 tsp cumin
1 tsp Turmeric
1/2 tsp black pepper
2-4 tsp hot curry powder (depending on your heat tolerance )
Sautee onion, garlic, ginger and peppers till soft.. Add in the rest of the veggies… Stir fry for five minutes… add in all other ingredients.. Simmer till liquid is reduced and broccoli is tender!!
